Anodization is when you take aluminum or aluminum alloy and place it in a chemical electrolyte bath consisting of elements like sulfuric acid. It is twice as strong as steel, making it practically nonporous and nonsticking.

You should look for a dark grey finish and it should weigh much less than the other metal cookware sets available.
